Can a sub choose which grades and schools to work in?
Often, yes. Most absence-management systems let you pick the schools you will work at and which jobs you accept. Fairfax County Public Schools in Virginia tells subs they can work across the district five days a week or pick select schools on specific dates. Your credential can limit you, though: California's 30-day permit allows only 20 days per teacher in special education.

Choosing well helps you and the class. Many subs start with a few schools close to home, learn the buildings, and get asked back. Some prefer the little ones and some prefer middle or high school; trying a few is the fastest way to know.
Districts differ on how much choice you get. Some let you decline any job; others expect a set number of days or ask you not to drop jobs late. Some jobs, like long-term or special education roles, may need more training or a license.
Ask the district's sub office how preferences work in its system, whether you can mark grades or subjects, and any limits on turning jobs down. If you are unsure a job suits you, ask the school office before you accept.
